Rachel Saxton

“Each dish is approachable and shines a light on our local farmers and Colorado products.” - Chef Rachel

Born and raised in the heart of the Midwest, Rachel Saxton grew up spending most of her time tromping around in the woods on her parent’s property. It was there that she fell in love with the outdoors and the rich, bountiful resources nature provides. Her passion for food was driven by this love and eventually grew into a career.

After graduating from The Culinary Institute of America and externing at the prestigious Eleven Madison Park in Manhattan, Rachel decided it was time to leave the city life for a place where she could pair her love for the wild and food. Since moving to Aspen ten years ago, she has worked in some of the best restaurants the town has to offer. Before coming to Aspen Meadows, she was Chef de Cuisine at Bosq, which recently earned a Michelin star.

She especially loves working with local produce, sustainable proteins, and foraged products -- bringing her unique approach to culinary artistry at the Aspen Meadows Resort as the Chef de Cuisine.

Sara Figueiredo

Executive Pastry Chef Sara Figueiredos' journey to become Executive Pastry Chef has taken her around the world to Singapore, Thailand and beyond — places she pulls inspiration from to create delicious pastries & desserts. After earning a Bachelor’s Degree from Johnson & Wales, Chef Sara worked at Harvest in Boston’s Harvard Square, followed by Italian-focused stints at Babbo and Eataly and a move to San Francisco where she worked at Michelin-starred Lazy Bear. A big promotion to Executive Pastry Chef at Craftsman and Wolves allowed her to develop a team of like-minded bakers. Chef Sara relocated to Colorado in 2021 and is West End Social's Executive Pastry Chef.
